3 things I know for sure about cooking

I’m sort of an amateur cook.

But I’m pretty good…

Here are 3 things I know about cooking:

1. Don’t wear your good pants if you’ll be frying or kneading anything.

2. If you ever get good, you’ll have to spend the rest of your life listening to your friends say “You really should open a restaurant.”

3. The simpler the better. Many of the best Spanish foods have only 3 or 4 ingredients. If you need to buy 7 new spices to make something, it’s probably not worth making.

About #2 – Anthony Bourdain talks about that in his book Kitchen Confidential. About the well-meaning dentist who loves throwing dinner parties, and figures he’ll start a restaurant when he retires…

And who proceeds to get his ass handed to him by the realities of the restaurant industry.
